Rocky Road | Makes 16
This recipe is great for when you want a chocolatey fix to keep you going throughout the day! Using ingredients that you can find in the supermarket (despite stockpilers) this rocky road will cure ANY chocolate cravings. Plus, if you’re prone to burning things in the oven, or the little ones want to help make something, it’s great as it’s a no-bake recipe! Simply add all your ingredients together and give them a good mix!
400g Milk Chocolate
125g Golden Syrup
125g Unsalted Butter
100g Mini Marshmallows
200g Digestive Biscuits, Chopped
200g Crunchie Bars, Chopped (Optional)
Line a 8 or 9” square baking tin with greaseproof paper / cake tin liners.
In a large bowl, break up your chocolate, put in your butter and pour in your golden syrup and melt this in the microwave on short bursts of heat, mixing between each burst to make sure it doesn’t burn. If you don’t have a microwave, put the bowl over a saucepan of boiling water and let it melt this way, again, stirring regularly.
Once your chocolate, butter and syrup has melted, add in your marshmallows, chopped biscuits and chopped Crunchie. Give this all a good mix until all the ingredients are combined.
Pour the mixture into your lined square tin and spread it out so the mixture is even in the tin.
Place your filled tin in the fridge until it sets. This shouldn’t take too long, but try to be patient! Once it has set, chop it up into squares and enjoy!
